Matcha vs green tea: the real differences

Matcha vs green tea: the short version

Both come from Camellia sinensis. Green tea is infused and the leaf is thrown away, so only the soluble fraction reaches the cup. Matcha is shade grown, stone milled and whisked into the water, so you drink the leaf itself. That single difference explains the colour, the texture and most of the price gap.

Taste

Green tea, made from dried leaf, runs from sweet and grassy to firmly astringent depending on the cultivar and how hot the water was. Matcha tastes denser. Shading raises the amino acid content and the cup comes out vegetal, smooth and umami, with a creamy note that an infusion never has.

Astringency in matcha is usually a preparation fault rather than a quality fault. Water at a rolling boil will make a good powder taste like a cheap one, and then people blame the tin.

Preparation

Green tea: leaf in hot water, wait, remove the leaf. Matcha: sift 2 g, add 60 to 70 ml of water at 70 to 80 °C, whisk in a zigzag with a chasen until the surface holds a fine foam. No filtering, nothing discarded.

The bamboo whisk is not decorative. A spoon leaves lumps, a milk frother whips air into the tea and flattens the flavour. Ninety seconds of wrist work is the whole technique.

What the published studies measured

An analytical study in Journal of Chromatography A in 2003 (Weiss and Anderton, PMID 14518774) measured catechins per gram of dry leaf and reported an EGCG concentration 137 times higher in matcha than in China Green Tips green tea. That is a laboratory measurement of the leaf, not of anyone who drank it.

On what happens in people, a systematic review with meta-analysis of 31 trials and 3,321 participants published in Nutrition Journal in 2020 (Xu et al., PMID 32434539) compared blood lipids in green tea drinkers against controls.

Caffeine, as a matter of composition

For matcha as a category, the USDA nutrient database gives 2.4 g of caffeine per 100 g of powder, so a 2 g bowl carries around 48 mg. Our own powder was analysed separately, datasheet MZ-FT-MAT-CER-001, at 3.2 g per 100 g, which is about 64 mg in a traditional 2 g bowl and 32 mg in a mild 1 g one. A brewed cup of green tea sits far lower, because you are drinking an extract rather than the leaf.

In the kitchen

Matcha behaves like a spice. It colours and flavours sponge cakes, ice cream, shortbread and lattes, and it holds up to heat better than most people expect. Green tea is harder to cook with beyond infusions, cold brews and the occasional syrup.

One rule saves a lot of butter: bake with culinary grade. Ceremonial powder in a sponge cake is £19 worth of nuance disappearing under vanilla.

So which one

If you want something quick, mild and forgiving, loose leaf green tea is the sensible answer. If you want a dense cup with a thick texture, a ritual of ninety seconds and an ingredient you can also bake with, matcha is the one. Most people who switch do it for the texture, not for the theory.

A cup in Kyoto

The first proper bowl I drank was in a small café in Kyoto, where the barista explained the whisking in careful English while quietly correcting my grip. What surprised me was the body of it, much thicker than an infusion, and a sweetness I had not expected from a green tea. It has been part of my mornings since, whisked with water at 75 °C and nothing else.
