Origin

Jingshan Mountains, birthplace of matcha

Our matcha comes from the Jingshan Mountains, in China's Zhejiang province, the historical origin of matcha tea. From there, it traveled to Japan in the 12th century to become the heart of the tea ceremony. Today, its slopes of constant fog and mineral soils continue to produce exceptionally green leaves, shade-grown to concentrate L-theanine, chlorophyll, and natural sweetness.

How to prepare it

Dosage (concentrated matcha):

  • Mild: 1g + 200–300 ml at 70–80 °C
  • Traditional: 2g + 350–450 ml at 70–80 °C

Sift, whisk with 60–70 ml in a zigzag motion until frothy, then add the remaining water. If it's bitter, reduce the dose or increase the water.

Storage

Closed container, in a cool, dry, and dark place. The refrigerator is fine if it's airtight. Maintains color, aroma, and antioxidants for months.

Ceremonial vs. culinary

Ceremonial: young leaves from the 1st harvest, smooth and sweet, for drinking with water or latte. Culinary: more mature leaves, intense flavor, ideal for baking and recipes.

1st harvest and 1st grade

1st harvest (shincha): spring leaves, the youngest and richest in L-theanine and chlorophyll. 1st grade: the superior quality within that harvest.

Does it have a lot of caffeine?

Moderate caffeine (≈30–50 mg per cup) with L-theanine that smooths the effect: stable energy and prolonged focus, without peaks or crash. Good alternative to coffee.

How many cups from 100g?

Between 50 (at 2g, traditional cup) and 100 (at 1g, mild cup). For daily use, one bag lasts 2–3 months.
